Hand Dipped Ricotta: This truly authentic cheese can only be made by producers of bacterial-ripened cheese (the good kind of bacteria). Forgoing modern methods, we allow our rich Ricotta to form as we simply add heat the sweet whey during production. Modern Ricotta production calls for the addition of milk powder and acids to increase the production yield. These additions also result in a cheese that is slightly firm and grainy in texture. PT.
