Moreover, every batch of milk that arrives at our facility undergoes testing in our onsite laboratory. Our in‑house analysis confirms that the milk is rich in protein and fats. In addition, milk quality can be assessed by the flavor of the final cheese. Cheese making, at its core, removes water from milk while concentrating solids and flavors.
