Brie Chataignes is a one‑of‑a‑kind creation from PT Pasti Enak, inspired by the bold tradition of Brie Noir but reimagined with a tropical twist. While Brie Noir is known for its deep black rind, we wanted a cheese with similar intensity yet a warmer, more inviting color. The solution came through our in‑house roasted chestnut vinegar, which we use to wash the cheese throughout its aging. This process gives Brie Chataignes its characteristic brown hue and layers of nutty, umami complexity.
Made with local cow’s milk from Indonesia, Brie Chataignes reflects our commitment to terroir and authenticity. Each wheel is aged for a minimum of one year, during which it is washed weekly with chestnut vinegar and carefully flipped. Over time, the cheese concentrates in flavor, becoming semi‑firm and almost spreadable. The extended fermentation unlocks rich umami depth, earthy undertones, and aromas reminiscent of toasted nuts and raw cacow.
