Although we feel that all of our cheese are good many are works in progress. We pride ourselves in the work we have done as well as our pursuit of perfection. By choosing quality and flavour over profit we are unable to compete with most of the cheese produced in Indonesia. Many cheese makers often use, low quality materials, oil, fillers, short aging times, and mass production methods to keep their prices low. We prefer traditional methods. We utilize the highest quality materials available and prefer that our cheeses naturally mature. These techniques are not new and are traditional methods that have always been used to produce world class cheeses.
