Moreover, every batch of milk that arrives at our facility undergoes testing in our onsite laboratory. Our in‑house analysis confirms that the milk is rich in protein and fats. As a result, this composition reflects excellent animal husbandry and ensures that our cheeses begin with the finest raw materials.
In addition, milk quality can be assessed by the flavor of the final cheese. Cheese making, at its core, removes water from milk while concentrating solids and flavors. Therefore, even slight differences in milk quality become noticeable in cheese. Flavors caused by feeding animals too much grain, using improperly fermented feed, or neglecting care often result in flat, stale, or chemical notes. Similarly, poor handling can lead to rancid, bitter, or unpleasant aromas. Fortunately, we do not face these problems because our farmers maintain high standards.
