This Alpine-style cheese is a tribute to the rugged elegance of mountain cheesemaking. Inspired by the traditional Appenzeller technique, it’s aged with a spiced brine wash that penetrates the rind and infuses the paste with complex, savory depth.

Made from rich milk and aged for 6 to 18 months, the cheese develops a firm texture with a nutty, slightly spicy flavor profile. The rind is aromatic and golden, with hints of herbs, cider vinegar, and alpine flowers—echoing the wild pastures that inspired it.

Perfect for melting, slicing, or savoring on its own, this cheese brings bold character to fondue, sandwiches, or charcuterie boards. It’s a celebration of alpine tradition that we craft with  care and precision.
