Historical Origin: The first cheese made by humans it is likely that this cheese was first made from milk that was stored in the stomachs of animals. It is believed that fresh cheese traces its origin back some 10.500 years to the early people of Southwestern Asia and their domesticated Oxen.

Aroma: Very Lite | Fresh | Milky | Creamy | Buttery
Taste: Sweet | Salty
Ageing: Slightly aged for 1 week in our caves prior to sale.
Special Characteristics: This cheese is best enjoyed within 3 weeks of manufacture. The cheese starts out very lite in flavor and soft and as it ages the flavors will become stronger and more tart. Around week three this cheese will become runny and have quite strong flavors.
Common Uses: Spreads, Appetizers, Salads, Pizza topping (not pizza base cheese like provolone or mozzarella)
